k&a: apple & chocolate muffins


February has greeted us in Antwerp with rather cold weather but I'm hoping it will soon give into spring with its cherry tree blossoms. I have to say that I'm looking forward to this month. I've got all sorts of fun plans with friends and the children have a week-long spring break so we've decided to take a road trip to Lille, France. More on that later.

Today I posted another recipe of mine on kitchen & aroma. Last Sunday I wanted to add muffins to our late brunch but I didn't want them to be too sweet. So, I baked these apple and chocolate muffins. As most of you know by now, I don't use refined sugar or white wheat flour when baking. As usual, there is no butter in these, just a touch of coconut oil and some organic chocolate hazelnut spread.

  5. Oh I totally forgot about lille, what fabulous news! Its so lovely:) You are going to enjoy it very much I'm sure. I'm tempted to make these muffins. I don't think I tried using my oven hard enough so far haha. So thanks for the inspiration.

  9. I love when the cherry blossoms appear in the spring. A trip to France is def. something to look forward to. Gonna pop over to check out your muffin recipe. I try to avoid refined sugar so I'm always looking for recipes that don't include it.
