The promised pizza sauce



I think it's time to deliver a promise I made on my old food blog ... ahem, in June 2011. I'm referring to the recipe of my pizza sauce, which I promised to share and forgot. Actually, I'm no longer making the one I made back then, so perhaps this forgetfulness was for the best. Back in 2010, when we were living in Denmark, we started the tradition of home-made pizzas on Fridays and have stuck to it all this time. When you make pizzas that often there are some things that are bound to change and the sauce is no exception. The recipe of my pizza dough (yeast-free) has also changed but I will update that one later.

On Fridays, at pretty much the exact same moment, you will find me in the kitchen putting on my apron before preparing the pizza sauce. I use plum tomatoes from a can but I don't cook them; I only squeeze them in a colander to get rid of most of the liquid. I mix the sauce with a hand blender but if you don't have one you can use a food processor.

PIZZA SAUCE

1 can (400 g) plum tomatoes (14 oz)
1 can (140 g) tomato purée (5 oz)
2 tablespoons extra virgin olive oil
1 tablespoon organic unrefined cane sugar
1 teaspoon balsamic vinegar (Modena)
1-2 cloves garlic, pressed
1 teaspoon dried oregano
1 teaspoon fresh basil, finely chopped (or ½ teaspoon dried)
¼-½ teaspoon fine sea/Himalayan salt
freshly ground black pepper to taste

Pour the plum tomatoes into a colander in the sink and squeeze them with your hand to get rid of any excess liquid. Let them drain in the colander.

In a medium bowl, combine all the other ingredients. Peel and press the garlic before adding to the bowl and finely chop the fresh basil, if using. Before adding the plum tomatoes, give them another squeeze with your hand while they are still in the colander and press on them slightly with the palm of your hand to get rid of as much liquid as possible. Add them to the bowl and use a hand blender to mix the pizza sauce.

The sauce can be refrigerated for 3-5 days in a clean glass jar with a lid.
